
Crispy Stuffed Chicken Breast
Ingredients
- Chicken breasts - 2 slices (500g)
- Salt - ½ tsp
- Dijon mustard - 1 tsp
- Olive oil - 1 tsp
- Black pepper
- Spinach (chopped) - 1 handful
- Mushrooms (sliced) - 3-4
- Cherry tomatoes (halved) - 3-4
- Mozzarella cheese (shredded) - 20g
- Egg - 1
- Flour - 10g
- Breadcrumbs - 20g
Steps
1. Prepare the ingredients. We're using mushrooms and spinach this time, but feel free to swap in your favorite vegetables.
2. Pat the rinsed chicken breast dry with a paper towel. Carefully slice it horizontally from the side, without cutting all the way through. Rub with salt, pepper, Dijon, and olive oil. Let it marinate for about 30 minutes.
3. Stuff each chicken breast with spinach, mushrooms, tomatoes, and mozzarella.
4. Use toothpicks to secure the edges so the filling stays inside while cooking.
5. Coat each stuffed breast in flour, then dip in beaten egg, and finally coat with breadcrumbs for that perfect crispy crust.
6. Place the chicken seam-side up in your air fryer basket. Cook at 190°C (375°F) for about 20 minutes, or until golden and fully cooked through.
7. Let the chicken rest for 5 minutes to seal in the juices. Remove the toothpicks, slice, and serve!
